I have been craving an Egg McMuffin for a while now but due to BDS I haven’t had one in a while. This doesn’t diminish the cravings for an excellent breakfast sammie.
I have set out a goal to make the best possible replacement for a Egg McMuffin but also attempt to refine it a little.
In the interests of not consuming pesticides, herbicides, and GMO (genetically modified organisms) I attempt to source only organic and free range products where the animals consumed their natural diets. In my opinion this always results in a healthier and thus tastier animal.
Ingredients
For this sammie you will need the following ingredients:
- Vidalia onion, cut into 1/2″ slices
- Loose Italian sausage
- English muffins
- Aged cheddar
- Eggs
- Chili crunch of your choice, I went with Fly by Jing xtra spicy
Step 1 – Onions
Slice your onions and brown them up nicely. Keep them generally together while browning, this provides a better finished product in the sammie. You want a medium low temp and use a neutral oil such as avocado. While your onions are caramelizing take your eggs out of the fridge

Step 2 – Sausage Patties
I discovered that Italian sausage has a very thick grind making it a little more difficult to roll into balls and smash but overall was successful. I found out the best results of rolling the sausage into balls was the let the sausage come up to room temperature.

The reason I roll them into balls is that I enjoy everything smashed style. This sammie is no exception. To smash them I would place them into the fry pan and put a square of aluminium foil over it and then use the bottom of a soup pot to squish the patty flat.
Step 3 – Frying the Eggs
When I’m making a breakfast sammie I like to use a circle mold to crack the egg into so they have a more consistent shape. This also raises the yolk up onto the egg white so you’re more likely to get a runnier yolk.



Heat up the fry pan to medium low heat and then spray the ring mold with avocado oil and crack the egg into it. Let the egg mostly cook in the ring mold and then remove the egg the from the mold and flip over. You might need to use a knife around the outside of the egg if there wasn’t enough oil spray.
Step 4 – Assembly
